my way is:(1)after cut into slices,soaked with little bit of water,baking soda(to make beef soft & tender),soy sauce.wine,& corn starch,saseme oil,lastly a few drop of cooking oil(that way,meat will not stick on wok)mix well.
                (2)heat up the wok or pan,then add cooking oil,put meat into wok then stir fry evenly & cooked until the way you dsired.
                (3)I normally at this step,put meat on a bow then cook the vegetables,i.e tomatoes,bay choi....,then mix beef with vegetables,soap base,then corn starch with water 7 a few drops of saseme oil.  VALLA!
